Tacos and mission style burritos abound in Boulder, but it's a bit more difficult to track down authentic Tex-Mex fare lovingly drowned in rich, spicy sauce. Efrain's, with roots in northern Chihuahua just across the border, is the local king of this style of cooking.
On offer here aren't the light beachside flavors of Californian Mexican, but rather Tejano-sized platters of rich red chile colorado, sizzling fajitas and enchiladas smothered in melted cheese. One welcome departure from the menus typically found in Texas is a wealth of plates incorporating green chile, a particularly Coloradan innovation.
The margaritas, quaintly served in mason jars, cut through spice quite nicely.
