Ask most Boulderites their opinion of food from El Salvador and you'll likely receive blank stares. Rephrase the question to include the word "pupusas", and instead the response of may enthusiastically communicate how fortunate we are to have this roadside shack of culinary ambassadors in town.
For those still unaware, pupusas are spheres of maiz flour (masa) stuffed with ingredients such as beans, chiles, rice, cheese or chicharron (fried pork rinds), often seasoned with the exotic Salvadorian spice 'loroco' and griddled. One makes an ideal handheld snack, or if served with the house-made guacamole, rice and beans a full meal.
The jolly wise-cracking in the kitchen is infectious, do yourself a favor and listen in. The tacos are a tad pricey, so stick to the namesake pupusas.
