Christian Saber, a Buenos Aires native, decided to set up shop after falling for Colorado powder and a Colorado woman. He chose to specialize in empanadas because of the regional lack of Argentine cuisine and because, in his words, "they're simple to take out and carry around, to go hiking with". Curious Boulderites were quickly hooked.
Photos of futbol and Patagonia paired with shelves of mate for sale complete the scene here. Also, the empanadas are leagues better than many, all freshly made with quality produce, cheese and meat in a variety of shapes and ingredient combinations. The chimuchurri is equally outstanding, and salads and sandwiches are also available.
Rincon Argentino is NOT the same as Rincon del Sol across the corner. Be warned.
