In addition to yoga, the local cultural combination of health-consciousness, buddhism and bohemianism predisposes a sizeable portion of Boulder's population to enjoy kombucha. The unusual creation of this beverage by fermentation with a SCOBY (symbiotic colony of bacteria and yeast) has ancient roots, and produces some suprisingly tasty flavors.

If kombucha strikes you as odd, withhold judgment until visiting the Rowdy Mermaid tasting room and you'll be greatly rewarded. The 'tea' is brewed with pure snowmelt and pleasantly effervescent, without suffering from the overly acetic tang some kombucha does. Variations on this base are delightfully enriched with fresh fruit and organic herbs.
