I’d really like to dig into the local cuisine on my trip. Any recommendations for authentic local places? Anything I absolutely must try?

Yes, fish and chip shop off London road called bardsleys. Don’t waste your time with the seafront to find “authentic fish and chips” it’s corporate rubbish.
Pompoko is a cheap quick sit down restaurant in the centre of Brighton for Japanese food it’s a Brighton institution.
La Choza does good Mexican tortillas and nice atmosphere.
Planet India is really cool restaraunt and if you want traditional English food then the lion and lobster is your best bet or English’s in the laines

If you mean English cuisine there’s a really good fish and chip restaurant off London road

Brighton is like London by the sea; you can just about eat anything your heart/tastebuds desire! It all depends how much you want to spend. My personal experience is limited to vegetarian but if you want seafood, which many do when they visit the coast, try Riddle& Finns. You could do worse than searching Trip Advisor. Enjoy Brighton, it’s a great city!

Brighton and the UK in general is very diverse and multi-cultural and you can see it in the cuisine! I don't think anything can be called 'local' as such but there are a few fish and chips on the seafront and another one in North Laine. I would also recommend Wa Ki Ka Moo Kow and the Longhouse Cafe for a delicious vegan English full breakfast. You'll find a lot of cute cafes in North Laine where you can have tea and cake too :)
