Even if you are not around for the flower carpet, Grand Place is the standout place to see if here for only one night. Order a drink on one of the cafés and enjoy the beautiful view. Take a stroll along the galleries st Hubert.
Take a walk to Mont des Arts (only 15 mins or so on foot from the Grand Place) for a fab view down to the town hall/G Place. Continue along Place Sablon with its pretty church.
For dinner avoid the Grand Place and the rue des Bouchers, head instead for The st Cathérine/rue de Flandres area and finish the eve with a drink at les Halles de st Géry.
Be aware that Monday is the closing day for many restaurants, but lots still to choose from.

I confirm this very good summary for a visit to the center of Brussels, maybe adding (as it's so close to the Grand Place) 'Manneken Pis', and be disappointed that he is so small ;-)
