On top of St. George hotel, there is a nice rooftop overlooking the Giza zoo always with a nice breeze in the summer. They serve above average food and alcohol, can be a lovely place for a late night chilling chat. Closes at 1 am which is kind of early for Egyptian nights.
Why you should visit it
Serves alcohol, not so crowded usually and has a menu covering all drinks and food you might need, as long as you are going with a good company you will have a lovely night, but if on weekends call to reserve first it might be crowded.
Special tip
Sunset is awesome from above there.
