I am an experimental archaeologist-food historian, who recreates Greek historical recipes using ancient or modern techniques for spectacular food events.
In 2000 I founded 'Greek Culinary History & Cooking Adventures' to create interactive, edible experiences that bring historical Greek gastronomy to life through experimental, sensory and public archaeology.
My work takes many forms, including history -themed dinners, historic cooking courses, edible installations, and historical food walking tours.
The walking food tours showcase Cretan gastronomy, culture and history in a unique and attractive way to whoever comes to Chania, with a need to understand and experience the historic and at the same time modern, adventurous and enigmatic city by using all the senses.
I am the author of a Gourmand award-winning cookbook, The Language of Taste, which is a dictionary (in Gr.) of the history and culture of Greek food and the founder and organizer of the biennial Symposia of Greek Gastronomy (conference).

Description
This multi-sensory food experience combines delicious food tastings, food history, politics, and culture. It begins with a light breakfast and an unforgettable Cretan beverage.
We’ll follow the trail of Arabs, Jews, Venetians, Ottomans, Greeks from Asia Minor, and immigrants who have passed through Chania and added their flavours to the local cuisine. As you sample delicacies from one-of-a-kind specialty food shops, you’ll get a better understanding of the city’s culinary history and how the locals eat.
Our walk ends with a dive into the distant past. We’ll visit an archaeological site to talk about ancient food and rituals. We’ll then visit a local taverna, where we’ll enjoy a short lesson in ancient cooking.
We’ll also be treated to home-baked bread, made according to a Byzantine baking method, cheese made according to ancient Greek writings, and other historical Cretan delicacies.
