If you come and visit Chicago you'll automatically want to try the deep dish pizza. However and I can confidently speak for many local Chicagoans (I don't mean suburbanites but actual Chicagoans) you won't find many of us downing the inch a half thick dough. We instead find places like Coalfire where we can back for seconds and thirds.
Their pizza is thin crust, it's topped with ricotta cheese. The wait is significant, and you may think that's a negative but in Chicago long waits are indicative of a to-die-for restaurant. They serve cupcakes at the end made by Chicago Cupcakes, one of the best you'll have. The icing on the cake is the price. A rich dining experience for a steal.
Go on a weeknight, before 7PM dinner rush, order any pizza with ricotta cheese. Especially say "Hi" to Kevin and Jeff their service is exceptional.
