Tamales, a labor intensive comfort food made of masa (a starchy corn-based dough) stuffed with meat, cheese or vegetables then wrapped in steam-trapping husks and boiled, date back to the ritual feasts of the Ancient Maya. Today they remain a staple of Mesoamerican and New Mexican cuisine. La Casita makes some of the best in the state.
The red or green chile and vegetarian tamales are all delicious and extremely affortable at only $1.35 a piece (you'll probably want a few). They're also a bit healthier here than elsewhere due to the use of vegetable oil rather than lard. Other usual suspects; smothered burritos, tacos, stuffed sopapillas, etc. also feature on the menu.
La Casita has another outpost at terminal C in the Denver airport to supply you with your last minute fix.
