La Prosciutteria is a cozy converted butcher shop that refuses to call itself a "restaurant." They prepare classic Tuscan sampler platters (taglieri) lined with selections of cold cuts, cheeses, crostini and seasonal fruits. It's always packed with people and you'll sit shoulder-to-shoulder, but portions are generous for what you pay.

Go for the local, informal character in the middle of a busy, semi-touristy street. Via dei Neri is a favorite stretch in the area between Piazza Signoria and Santa Croce, but La Prosciutteria is a bit of a hole-in-the-wall, so most people walking by miss it other than those already "in-the-know." The food on offer is all fresh from the region.
They'll prepare the "taglieri" in either aperitivo- or dinner-sized portions. Go big or go home (translation: order the dinner portion!)
