However when it was reported in the news last year that former US President Barack Obama and celebrity chef Anthony Bourdain dined out at a bun cha restaurant in Hanoi, the once unfamiliar dish to many had become an overnight sensation.
Bun cha is said to have originated in Hanoi. It’s a meal that consists of grilled fatty pork dipped in nuoc cham (a common Vietnamese dipping sauce made of fish sauce, vinegar, sugar & water) and served with rice vermicelli and a bunch of herbs & leaves on the side. There were two types of grilled pork meat in this – sliced pork and minced pork.
Inside the nuoc cham, there were sliced pickled green papaya that gave a nice crunch. It also had a slightly pungent flavour of chopped raw garlic.
