If your looking to proper hike I’d climb then your really need to head out of city or better still go to wales of Scotland.

Staying in the city then head up to Hampstead Heath where you get good walks, can swim in the ponds and walk
Up parliament hill and get great view of the city.

Take the northern line and get off at Belsize Park and it’s about a 15 min walk to the start of the heath

Look up the seven sisters walk. It’s not exactly London but it’s apparently beautiful. Otherwise if you don’t mind flat surfaces: little Venice canal , regent’s park and Hyde park all pretty. Richmond park further but also beautiful !

Dominka has made some good suggestions, but I would also highly recommend the Time Out Country Walks books (volumes 1 & 2), especially if you'll be getting in & out of London by train. Have a look at the Saturday's Walkers Club website as well: https://www.walkingclub.org.uk/ - a brilliant resource.

You can get wonderful views of the city from inside London from Parliament Hill, Hampstead Heath and Alexandra Park. For more serious hikes maybe the North Downs in Surrey around Box Hill (which features in Jane Austen’s book Emma for a literary angle).

The Chilterns is a nice countryside area near London (and can be reached by tube - Metropolitan Line) with plenty of hiking trails.

South Downs National Park is also only an hour by train from London and there are plenty of walking routes there with nice sea views.

You could also consider Epping Forest (also reachable by tube - Central Line) although it's not amazing in terms of views.
