If you want history/art/outdoors/Palace all in close proximity ... go to Trafalgar Square (Charing cross tube) and visit the National Gallery AND adjacent National Portrait Gallery (have both free and paid exhibits), have a snack in Trafalgar Sq itself and people-watch and then walk into St James' Park for views of London buildings & exterior Buckingham Palace (off the Mall)...another great & quirky art gallery is also nearby ... called the ICA

Go to Columbia Road Flower market near Bethnal Green in East London. Book for a Sunday roast and pint at The Royal Oak pub. Or get a salt beef bagel at the bagel place on Brick lane (the one with the longest queue is the only one to go to). The Geoffrey museum nearby is also a unique place to visit.

If the weather is good - there is always lots to see and do on the South Bank plus good pubs and restaurants and a great vibe. If you want a birds eye view of the Thames and surrounding area - a trip up the Switch House at the Tate Modern is worth while and FREE too. #

I would say Columbia Road flower market and Brick lane. Busy but vibrant and cool.

There are so many things to do. My best advice would be to look at https://www.timeout.com/london/things-to-do/bank-holiday-in-london for all the events etc.

It all depends upon your personal interests and weather of course. As it's going to be a Bank Weekend tourist attractions will be even more busy.
As far as I am aware the forecast is meant to be quite good so how about a boat trip to Greenwich or Emirates Cable Car.
Hyde Park is great to be on Sunday too.
