Tandem opened in 2013 on Via Giovanni Paladino in the historic centre of Naples as the first restaurant in the city built entirely around ragu napoletano, the meat and tomato sauce cooked slowly over several hours, and around genovese, the onion-based sauce associated with Sunday lunch. The Via Paladino site remains the original and sets the format: a compact dining room, an informal atmosphere and a menu built on a handful of pasta dishes rather than a broad Neapolitan repertoire. The concept has since expanded to several further branches across the city, including in Spaccanapoli, Vomero, Porta Capuana, Sedile di Porto, Mezzocannone, Piazza del Gesu and Pignatelli, bringing the total to around eight sites. Each follows broadly the same ragu-focused format, so the original is not markedly different in menu, only in size and atmosphere. The Via Paladino restaurant sits in the university quarter close to Via San Biagio dei Librai, walkable from the Universita and Duomo stops on metro Line 1.
