I would recommend you to go to a bakery where you can sit down (which are not typical) for example some of the "Paul" bakeries. In Saint Germain de Pres you can go to "Secco" 12 Rue Mabillon, 75006, you will have a big variety of pastries. If you wish to have great coffee you might want to go to "Cafe Peloton" or "La Caféothèque" both in Le Marais. If you want the most fancy but also touristy ones you can go to Laduree or Angelina... ;)

What do you mean by breakfast in Paris ?
French do not have breakfast as a meal. They mostly have breakfast at home : a cup of coffee and a tartine (piece of bread) with jam or butter.
Many french "cafés" nevertheless offer american breakfast to accommodate the tourists. You can have also a coffee and a tartine in any "café" as a local.
