I’d really like to dig into the local cuisine on my trip. Any recommendations for authentic local places? Anything I absolutely must try?

Yolty's in Cabaret is a good bet. Authentic food in an authentic setting. You will be eating with locals, in a local style. The chicken is good. So is the fish, but you have to know how to work around the bones. If she has host, eat that. I have always avoided the beef. I don't know why, though.

No matter what you order, it will be authentic and very "standard Haitian" food. The meat will be served with rice and bean sauce and picklies. If you don't mind really sweet soda, she has glass bottles of soda(pop). Get one you aren't familiar with. Or just a coke (real sugar) or Faygo is popular.

And right down the street is Rosie's, which is a sort of gift shop featuring locally-sourced and produced items made by local artisans (mostly women) with a goal of providing a means for women to support themselves and their families. Be SURE to get some Vanilla (at Rosie's or anywhere) You can buy a HUGE bottle of real Vanilla extract for the same price you can get a small bottle of faux Vanilla"flavoring" at home.
