Meringue is called in Spanish "espumilla" which literally means "little foam" because is made of a delicate, frothy mixture made with beaten egg whites and sugar. This is a very popular delicacy that you can see everywhere.

This is a very traditional chain of meringue shops that are in the south of the city. They also serve good breakfasts, fruit salads, fruit juices and coffee with a very traditional bread called "quesadilla" which different than that from Mexico. This is a flat bread made of wheat and egg folded with cheese inside.
