One of my personal favorites, Maccheroni (Piazza delle Coppelle, 44) is a great choice. Try it out!

My favorite is Osteria del Sostegno, 2 minutes walking from Pantheon square. Very good and tasty local food.

You can find traditional restaurant not so far away from there just 10/15 minutes walking, the name is Colline Emiliane and on the same street (via degli Avignonesi) we can recommend Olimpio and also close to them there is Osteria Romana on (via Rasella).

Rob I'd like to add a couple of addresses:
1) it's not a real restaurant, look more like a deli or let's say an Italian fast food: "L'Antica Salumeria" right on pantheon square. It may look like a tourist trap but it's the heaven of Italian flavors. Go give it a look.
2) Da Checca, an healthy kind of place, they offer a delicious menu of healthy salads, pastas and soups

Hi Rob, da Fortunato al Pantheon is right around the corner from the Pantheon, and though it is well-known, I wouldn't call it touristy: the food is delicious and the ambience is lovely. Really recommend their carbonara. If you've read any of Pat Conroy, you'll like to know that this restaurant was a big favorite of his :D.
If you go, make sure you make a reservation beforehand!
