I suggest you a restaurant named mani in pasta in trastevere area or another one name dFelice in testaccio or le cave di s. Ignazio sabatino in front of sant'ignazio church
Well, I'm gonna suggest you to explore the fantastic Mercato Centrale, a treasure trove of flavors, you can sample all types of cuisine and deliciousness, it's a kind of food court but offering selected stalls, where you can pretty much sample all the Italian taste IN ONE PLACE

If this doesnt fit you, and you're looking for something a little bit more like a restaurant, just head on the first floor of Mercato Centrale: a wine bar and restaurant overseen by the Michelin star chef Oliver Glowig’s, a German chef specialised in Italian cuisine. Here you can taste his fantastic menu for just a cheap price (considered he's a top chef!)

you won't be disappointed!

Go to 'Le Tamerici', near Trevi fountain.
Great Italian food!!!

You can easily taste some of the best product of Italy and Rome at Eataly - that's very neat Termini station.

If you head to the centre, look for local trattorias like Armando al Pantheon (close to piazza Navona and the Pantheon) and order carbonara or amatriciana or gricia - these are the Roman local pasta speciality dishes.
