Australia may be far away and modern Australia is very young by world standards, but distance and youth have their benefits. Experimentation being the first and most important here; it's much easier to take risks when you're not set in your ways or bound by tradition. And Australian chefs sure do like to take risks. The only rule is that rules are meant to be broken. That's not to say you won't find the classics here. It's just that traditional fare and the topsy-turvy are often on the same menu.
Perhaps that's the effect of being in one of the most ethnically diverse cities on the planet? The world is yours! So if you want French-Vietnamese fusion go get it. Tex-Mex? Done. Ghanaian? Easy. Nepalese? Not a problem. Malaysian? Take your pick. Thai with a twist? Some say it's better than Bangkok. Yes, this city offers every kind of cuisine you can imagine. You won't have time to try them all, but you must, must, must eat seafood. It's fresh, locally sourced and a non-negotiable Sydney experience.
