You can pay both in Rials and Dollars ( or even Euro), But I recommend you to go there with an Iranian friend because they maybe overcharge you if they know you are a tourist.

Normally in irans carpet markets iraniban rial are used but there are exchange offices in carpet markets

Only the official currency i.e. Rial. But be careful while exchanging. There are skillful traders of foreign currencies who could easily cheat you while exchanging. The carpet sellers would like to sell their goods to foreigners so that they could ask you foreign currency and chrge you more.

iranian rials, euros and dollars would be accepted. i think you can also pay with uae dirhams, if its easier for you. the exchange rate might not be the BEST exchange rate but it won't be a very bad deal either.

Usually in iran not different between currency, you can pay with euro or doller or rial! because carpet sellers kinde of great business, so they are very flexibility in work 😉

I guess it would be more beneficial for you to pay in IRR and everyone should be accepting IRR from you.

And if you Take out one 0 from the numbers printed on the money you get the currency based on TOMANS which is more common among sellers.
For not getting confused ask them to write the exact number they want based on tomans so you can add one 0 and pay the money based on the printed numbers.
Numbers printed on our money is in Rials, while people mostly tell you the price in Tomans. It's not that complicated though. All you need to do is to reduce a zero from Rial and it becomes Toman (eg. 10,000 Rial equals 1000 Toman). And Always ALWAYS ask for the price in Rial/Toman. You'd better not let them know you wanna spend Dollars. ;) Have a nice trip.

Also i see all the warnings and true there are always some bad apples, but really generally they are pretty decent people and they do want to sell stuff and would try to entice you (and who wouldnt be entice with the beautiful carpets) BUT they wont cheat you.
