Colorado loves beer, and many craft brewers value the characteristically American approach of radical experimentation and the resultant taste bud-frying hop flavors, absurdly syrupy stouts or boozey strong ales. Prost stands out from the pack by brewing exclusively traditional pilsners, bocks, dunkels and other light German lagers.
Set up in a building with an open floor plan are several huge banquet tables in traditional German fashion. In good weather most of the drinking takes place outside. This layout lends itself to meeting friendly strangers and drunken sing-alongs, and paired with the full liter (maß) sized mugs offers the true Bavarian experience.
The hefeweizen is superb if you like banana bread. Prost Brewing shouldn't be confused with Prost Fine Beer and Sausages in the same neighborhood.
