This is a true family operation; unconfined Berkshire pigs are cared for by the Duffy brothers, who chose to adopt their late grandfather's profession after falling on rough times. The recipe for their outstanding bacon is pure and simple: three kinds of sugar, 11 spices, salt, cherrywood smoke and 16 days curing time, no added junk or extra water.
