Frybread is one of the best culinary inventions of the New World, a mere flat circle of dough like naan or a tortilla, elevated to perfection by deep-frying. This serves as the base of many of Tocabe's dishes, some of which incorporate other distinctive specialties like neolithically-scaled bison ribs or butternut squash with sage and brown sugar.
Mexican, Italian and Vietnamese restaurants provide Denver with a healthy scheme of ethnic cuisine, but can also be found elsewhere. Tocabe, a fast-casual Native American restaurant created by a member of the Osage tribe, is far more unique and just as delectable. The amount of food given for price is extremely reasonable as well.
